But the right conclusion is that pre-mix just doesn't make sense. A CO2+syrup system saves a lot of money: the estimate is that Disclave's system paid for itself in four years. And you get to serve the real Brand C stuff (I've heard it lacks both coca and cola these days; perhaps the C stands for caramel, caffeine, and calories). And I, at least, prefer the taste of carbonation to that of phosphation. The downside (other than finding the labor for the care and cleaning) is that you need a source of running water. This year, it's looking like we may not to be able to swing it. Our contingency plan is for bottled soda. In case anyone doesn't know, Disclave is this Friday to Monday at the Sheraton Premier at Tysons Corner, Virginia. It's the big crystal thing on Route 7 at the toll road.
