I love strawberries and we tend to get a bunch and have them on cereal until they are gone or get tired of them. At that point I make a fresh strawberry bread. It isn't low anything. I believe in portions, not the "low" bit. There are plenty of "low" recipes on food websites. I tend to spend a lot of time at allrecipes.com as I be looking at something and think of something else to make and look up recipe after recipe. Or go simple - clean and hull them before the meeting and bring them to just eat out of hand. You can bring some no fat Cool Whip or sour cream if you feel people need to dip the berries into something. Since the meeting in in VA, you won't have a long drive in the heat. Yum!!
