People who buy "fresh" corn in a supermarket have already lost. It's not fresh, being days old after picking. Most of the sugars have already turned to starches. The exception is varieties like "Silver Queen" which are bred to be super-sweet and are like candy when fresh-picked. Most people also buy corn which is too mature -- big tough kernels -- and of course the only way to check on kernel size is to pull away some of the "shuck." That supermarkets don't want you to do this says something about them. Being a one-time farm boy, I regard supermarket corn, like supermarket tomatoes, as plastic imitation food for suckers. --Ted White
